This is an excellent recipe
Ingredients:
1 Large Bell Pepper Sliced
1 Large Onion Sliced
3 Cloves of Garlic Minced
2TBS Margarine
4 oz Black Olives Sliced
1 Large Can sliced Mushrooms
4 Hoggie Rolls
8oz Mozzarella cheese

Directions:
In a large skillet add garlic, onion and bell pepper and saute for 5 minutes or until tender. Add mushrooms, and black olives, saute for additional 2 minutes or until they are heated through. Add mixture evenly on buns and then top with cheese. Enjoy!

Today is my birthday and I was lucky enough to have someone make this very good, very easy cake for me! It's to die for if you are an Oreo cookie fan! I am!



1 pkg. (2-layer size) devil's food chocolate cake mix
4 squares BAKER'S Semi-Sweet Chocolate
1/4 cup (1/2 stick) butter
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
2 cups thawed COOL WHIP Whipped Topping
12 OREO Cookies, coarsely crushed



HEAT oven to 350°F. Prepare cake batter and bake in 2 (9-inch) round cake layers as directed on package. Cool in pans 10 min. Invert cakes onto wire racks; gently remove pans. Cool cakes completely.


MICROWAVE chocolate and butter in small microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Cool 5 min.


MEANWHILE, beat cream cheese and sugar in large bowl with mixer until blended. Gently stir in COOL WHIP and crushed cookies. Stack cake layers on plate, spreading cream cheese mixture between layers. Spread top with chocolate glaze. Let stand until firm. Keep refrigerated.

I thought this would be a copy of a recipe that I love from a local restaurant I love, sadly it didn’t come close to fitting the bill. I was hoping it would be right on the money but it wasn’t.

Don’t get me wrong the recipe is really good. If you like cilantro you will love this rice. This recipe has a nice and spicy but you can control that with the amount of jalapenos you use. You ca also cut down on the garlic, but I wouldn’t. The garlic really melds this recipe together. I originally posted this recipe in 2009 so I have no idea who I owe credit to for you recipe. If it's you please let me know.

Ingredients:
  • 2 tablespoons butter
  • (2 ounce) jalapeno, chopped devein for a milder taste or use (4 ounce) can of chopped green chilies
  • 1 1/2 cloves garlic, chopped
  • 1/4 cup onion, chopped
  • 1 cup long grain rice or brown rice
  • 2 cups chicken stock
  • 1/4 teaspoon ground cumin
  • 1/8-1/4 teaspoon salt
  • 1/8-1/4 teaspoon pepper
  • 1/4 cup chopped cilantro
Directions:
  1. Sauté in butter the garlic, onion and jalapenos until soft.
  2. Add uncooked rice.
  3. Stir constantly until rice is slightly brown.
  4. Pour in chicken broth.
  5. Stir in the cilantro, cumin, salt and pepper.
  6. Cover with a tight fitting lid.
  7. Cook for 30-45 minutes until rice is soft. (Brown rice can take up to 70 minutes to cook)
  8. Fluff and serve hot.

Chicken Enchilada Casserole


Ingredients
3-4 chicken breasts (or 6 Halves) cooked and shredded
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of chicken soup
1 (8 ounce) can diced green chilies
1 ounce of chopped mild jalapenos
1 (8 ounce) package cheddar cheese, grated
1 (8 ounce) package monterey jack cheese
1 small onion, diced
1 teaspoon salt
12 corn tortillas
8 ounces sour cream
8 cream cheese

Directions



  • Sautee onion until translucent

  • Add soups, sour cream & chiles in large pan

  • Add only enough chicken broth to slightly thin.

  • Simmer on low 15 minutes.

  • Add chicken and heat

  • In casserole dish, arrange shreaded Tortillas flat across bottom, spoon in enough of the sauce to cover then sprinkle enough cheese to cover.

  • Repeat layering of the frtortillas, sauce and cheese

  • Bake in 350 degree oven for 20 minutes.

Soft Garlic Breadsticks


INGREDIENTS
1 1/8 cups water (70 to 80 degrees F)
2 tablespoons olive or canola oil
3 tablespoons grated Parmesan cheese
2 tablespoons sugar
3 teaspoons garlic powder
1 1/2 teaspoons salt
3/4 teaspoon minced fresh basil (optional)
3 cups bread flour
2 teaspoons active dry yeast
1 tablespoon butter or stick margarine, melted
DIRECTIONS
In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Divide into 20 portions. Shape each into a ball; roll each into a 9-in. rope. Place on greased baking sheets. Cover and let rise in a warm place for 40 minutes or until doubled. Bake at 350 degrees F for 18-22 minutes or until golden brown. Remove to wire racks. Brush warm

Ingredients:
1 lb. ground beef
1 can (16 oz) pinto beans (I used Great Northern I had it on hand)
1 can (8 oz) tomato sauce
1 can (15 oz) Diced Tomatoes
1 envelope taco seasoning (I used Taco Bell I had it on hand)
1 cup shredded cheddar cheese
3 1/2 cups corn chips (Fritos)
1 1/4 cup sour cream

Directions:
Cook ground beef until meat is browned; drain. Stir in beans, tomato sauce, taco seasoning mix and 1/4 c. of cheese. Sprinkle 1 cup corn chips in bottom of 8x8 baking dish. Cover with chili. Bake at 350 for 20 minutes. Spread sour cream over chili. Top with remaining corn chips and cheese. Bake 4-5 minutes longer.6 to 8 servings

Best Blasted Rapid-Roast Whole Chicken
This was on the menu tonight!
Yummy! It's so juicy!



Ingredients
1 whole chicken (about 3 to 3-1/2 pounds)
2 tablespoons oil
2 tablespoons melted margarine or butter
1 1/2 tablespoons lemon juice (can use more lemon juice if desired)
1 1/2 tablespoons seasoning salt (or use as much as desired)
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper (optional)
2 medium onions, quartered (may omit if desired, or can use a whole lemon, see recipe description above)



Directions
  • Rinse the chicken inside and out well under cold water, then pat dry using a paper towel.
  • In a small bowl mix the lemon juice with oil and melted butter until blended, then rub all over the chicken.
  • Using clean hands rub the inside and outside of the chicken with seasoned salt, garlic powder, black pepper and cayenne (you can season the chicken under the skin also if desired).
  • Place the quartered onions inside the cavity (you may omit the onions if desired, I like to add them in for extra flavor).
  • Place the chicken into a baking dish (you can place the chicken onto a small roasting rack if desired).
  • Using cotton string tie the legs together tightly.
  • At this point you may cover and refrigerate for up to 6 hours (not more than that or the acid in the lemon juice will start to "cook" the chicken).
  • Set oven to 450 degrees F.
  • Roast the chicken at 450 degrees for 20 minutes, then reduce the heat to 400 degrees and continue roasting for about 40 minutes (or until the internal temperature reaches about 175 to 180 degrees F. about 1 hour or a little less).
  • Cover with foil and let sit for 15 minutes before slicing (do not slice before that time or the juices will flow out!).
Creamy Garlic Pasta

Ingredients
1 (1 lb) box pasta, cooked as directed, drained and kept hot
2 tablespoons butter or margarine
4 garlic cloves roasted
2 tablespoons flour
1 1/2 tps chicken bouillon
3/4 cup water
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Directions

  • Melt butter and add garlic in a medium sauce pan.

  • Cook over medium for 1 minute.

  • Add flour and cook 1 minute, stirring constantly.

  • Stir in broth and milk and cook, stirring frequently, until sauce boils and thickens.

  • Add parsley, salt, pepper and cheese.

  • Stir until cheese is melted.

  • Toss hot pasta with sauce and serve immediately.

Trash Can Spiral Omelet

I can't brag about this enough! YUMMMY!!


Ingredients:
6 sliced fresh mushrooms
1/4 fresh bell pepper chopped
1/4 fresh onion chopped
3 small cloves garlic chopped
1/2 cup chopped cooked ham (lunch meat)
1/2 cup chopped cooked chicken (lunch meat)
2 oz cream cheese
1 TBS flour
3/8 cup milk
3 TBS grated parmesan cheese
6 eggs
2 TBS margarine
8 oz grated mixed cheese blend
Salt
Pepper

Instructions:
Line the bottom and sides of a greased 15 inch X 10 inch and 1 inch deep jelly roll pan with parchment paper, grease the paper and set aside.

In a mixing bowl (I used my Kitchen Aid mixer it works like a dream on this) add room temperature cream cheese and milk blend together until smooth. Beat in parmesan cheese and flour until blended smooth, then beat in eggs and mix well. Pour mixture in prepared pan.

Bake on 375 for 20 mins. Meanwhile, in a large skillet, sauté peppers, onion and garlic for about 5 mins or until tender, and then add mushrooms, chicken, ham and sauté all together for about another 5 mins. Keep warm.

Once cooked turn omelet onto a work surface, peel off parchment paper and return omelet to the jelly roll pan. Sprinkle with cheese, then vegetable /meat mixture and give it a few extra shakes of parmesan cheese salt and pepper to taste. If needed add back to the oven to melt cheese. Once cheese is melted roll up the omelet jelly roll style, starting with a short side. Slice to serve... Enjoy!
